I decided to make another batch of Apfelwein. I had bought some cheap apple cider when it was on sale a few weeks ago, so I’m now getting around to making the wine.

Process:
Poured 1 gallon of apple juice into my 5-gallon carboy using a funnel. I then filled the funnel two-thirds full with brown sugar and poured more apple juice through it. I repeated this until I had added 4 gallons total and all of the sugar. I opened the yeast packet and pitched the yeast, then used the last gallon of apple juice to wash any yeast off the inner sides of the carboy.
6-12-21: Put into primary carboy, OG measured at 1.056 giving an alcohol potential of 7.3 %ABV.
1-27-22: Bottled into 53 12-ounce bottles. FG was measured at 0.995, giving a strength of 8.1 %ABV.
