Third and final mead recipe I’m doing on my first mead making day. I wanted to do just a basic mead recipe, with only honey, to see how that turns out.

Process:
I put my honey in a warm water bath for about 10 minutes to get it flowing easily. I then dissolved 3 pounds of honey in about half a gallon of water. I added this to my primary 1-gallon carboy and topped up to about 3 inches from the top with water. I added 1 teaspoon of yeast nutrient, one-third a package of Cote des Blancs wine yeast, and attached an airlock. I put it aside in my brew room to start primary fermentation.
6-5-11: Put into primary carboy. OG measured at 1.132, giving it an alcohol potential of 19.6 %ABV. Airlock had some activity after only a few hours.
1-12-12: FG measured at 1.005, giving a strength of 14.1 %ABV. Bottled into 10 12-ounce bottles.
